Pumpkin-Soup

Today I had some Pumpkin-Soup for Lunch. I saw some nice Pumpkins when I went to the supermarket and just had to buy them.
The pumpkins I bought are middle sized I think, they are not theís really small ones (for decoration) and not the bis ones you use for Halloween.
I took a picture of the pumpkin with a pencil beside it, so you can guess the size.

Pumpkin-Soup



Ingredients:
- one middle sized Pumpkin
- 2 Potatoes
- 1/2 L vegetable Stock
- 4 Tablespoons Pumpkin-Seeds
- 2 Tablespoons Coconut-Oil
- Pepper, Paprika

First peel and chop up pumpkin and potatoes. Put the coconut Oil (of coure you could use any other oil, butthis one gives a very light coconut flavor to it- delicious!) in a pot and heat it up. Then sear the potatoes and pumpkin peaces in it for some minutes. Fill everything up with about 1/2 L of vegetable Stock (maybee a bit less). Now let it simmer for a while. When everything is cooked put it in a Blender, or use a stik-blender, blend until smooth. Fill in a soup-bowl and decorate with some Pumpkin-seeds (or soy-cream if you like).
This amount is for two servings as a main dish or four as a starter.

Maybee you are on a weight watchers diet (like I am right now), then you might be interested in the fact that the whole soup has only 5 Points without the Pumpkin-Seeds!
